If you don't like working with double-pointed needles or don't have the right sized needles to make the socks you want to work, you can easily knit a sock on two circular needles rather than four or five double-pointed needles.

This method makes the knitter feel a little more in control of the sock and is a good intermediate step between working with double-pointed needles and working two socks at a time on two circular needles.

This tutorial is illustrated with steps from the short socks knitting pattern, so you can follow along there as well if you like.

To begin, cast on the number of stitches you need onto one of the circular needles.
