Definition:

Casting on lays the foundation for your knitting project. It is the method by which stitches are formed that you then knit or purl to form your knitted item.

There are many different methods for casting on, and different ones are more appropriate for different projects. The most basic types of casting on are the long-tail cast on and the knitted cast on.
