Just because a gift is quick and easy doesn't mean you didn't put a lot of thought into it or that it's not a great gift. If you know someone who is outside a lot when it's cold outside -- whether for work or for fun -- knitting them something that will help keep them warm is a great idea.
My Fleece Earwarmers are a nice project for keeping ears cozy. Worked in a checkerboard pattern in two colors of fleece yarn, they're quick to stitch and make a graphic statement on someone's head.
And as usual with knitting patterns, you can pick the recipient's favorite colors to work in rather than the red and orange I used if you'd rather. Don't have fleece yarn on hand? A chenille or even a bulky wool would be a great choice for this project, too.
