When knitting for really little ones -- and bigger little ones, too -- simple patterns are really nice, because they're done super quickly so it's not such a big deal if the baby quickly outgrows whatever you knit.
For preemies, knit hats are a great choice because they tend to have problems with temperature regulation even more so than term babies. Eileen Casey has a cute and really easy knit hat sized for preemies up to 24 month olds that's just a knit rectangle folded over to make a hat with a cuff.
The easy slip stitch pattern adds interest for the knitter but not so much ventilation that it's impractical for a baby who really needs a hat to keep warm. And the tassels add a little bit of fun for kids of any age who wear it.
